During these economic-crisis times, we have to tighten our purse-strings and come up with creative ways to feed the family, and yet still be able to produce healthy options. While we are conscientious in ensuring the chickens we buy are halal, other cooking ingredients must not be overlooked. So, we should be extra careful. Here are my favorite recipes to quick, healthy, yummy & economical meals!

Chicken Breast with Pasta

Chicken Breast with Pasta You need:
  • 8 oz. Ranch original salad dressing
  • 5 tablespoons Dijon mustard
  • 4 whole chicken breasts, skinned and boned
  • 4 oz. butter
  • 10 oz. pasta
  • Chopped parsley
How to:
In a small bowl, mix together salad dressing and mustard. Saute chicken breasts in butter until browned in a skillet. Transfer to 4 individual plates and set aside. Serve the mix from the salad bowl evenly over pasta and sprinkle with parsley. Serves 4 pax.

Thai Curry Chicken

Thai Curry Chicken Enjoy this easy-to-make, great-tasting & low-calorie Thai dinner!

You need:
  • 2 boneless, skinless chicken breasts, cooked or baked & cut into cubes
  • 500 ml Red Curry Sauce
  • 1 large green pepper, cut into strips
  • 1 medium cucumber, sliced
  • 10 large mushrooms, sliced
  • 2 tablespoons lime juice
  • 2 tablespoons citrus marmalade
  • 2 cups steamed Jasmine Rice
How to:
Stir-fry the pepper, cucumber, and mushrooms in the lime juice and marmalade at medium-high heat in a skillet (or wok) with no or little oil for five minutes or until the mushrooms darken in color. Add the curry sauce and chicken to the skillet. Stir to coat chicken and vegetables evenly. Let the sauce and ingredients simmer for five minutes on medium-high, then remove from heat. Serve with steamed jasmine rice. Serves 4 - 5 pax.

Asian Buffalo Chicken

Asian Buffalo Chicken A little bit Asian, a little bit Southern, this enticing dish will temp all who sees & smells it, from the youngest to the oldest member of your family. Try it!

You need:
  • 2 pieces of chicken thigh
  • 6 pieces of chicken wings, halved
  • 4 tablespoons Teriyaki sauce
  • 8 tablespoons Moores Hot Wing Sauce
  • 2 teaspoons garlic powder
  • optional green and red peppers
How to:
Prepare the sauce by mixing the Teriyaki and Hot wing sauce. Place the chicken thigh on an aluminum foil in an oven-safe dish, and sprinkle the garlic powder over the chicken breast. Pour the sauce mixture over the chicken and close foil. Bake for 1 hour at 360 degrees. Ideal for a quick, yummy dinner. Serves 2 - 3 pax.

Grilled Mango Chicken

Grilled Mango Chicken Incredibly easy and yummy, this recipe combines the fun task of grilling and fulfills the tasty cravings for mango all in one go. Even picky eaters will love this!

You need:
  • 8 boneless, skinless chicken breast
  • 4 oz mango puree (express tip: get from a jar of baby food)
  • optional fresh coriander as garnishing
How to:
Cut chicken into smaller pieces. Pour half the mango sauce over it, mixing it well, and set aside the rest. Place chicken into refrigerator and leave it to marinate overnight. Preheat oven at 375 degrees. Grill the chicken and brush some leftover marinate onto the chicken pieces the first few times. Continue grilling until chicken is well-done. Place reserved mango puree in a sauce pan over medium heat, stirring till warm (not boiling!). Serve the grilled chicken with a spoon of the warm mango sauce. Serves 2 - 4 pax.
